AKA Pork with Root Beer Apples
It's overdue, I'm sorry, but here's the promised recipe from our first meal in the newly done kitchen!
5 lbs Pork Loin (we usually buy a big one at Costco and use half of it)
Jerk Seasoning
Preheat oven to 350. Rub jerk seasoning all over the pork loin. Roast for about 70 minutes or until internal temp is 155 degrees. After done, let pork rest for about 5 minutes.
Root-Beer sliced apples
4 large Granny Smith apples
6 oz brown sugar (not exactly sure how much that is, but we call it 3/4 cup)
1 1/2 Tablespoons cornstarch
2 1/2 cups root beer soda
1 teaspoon nutmeg
1/8 teaspoon ground cloves
cold water 1 1/2 teaspoon
Core, peel and cut apples into four wedges. Cut four slices per wedge. Combine root beer, nutmeg, cinnamon, and ground cloves in a sauce pan. Bring to a boil and stir frequently.
Separately, in a owl, mix cornstarch and a little water to make a thin paste. When the root beer mix starts boiling, add cornstarch and mix well. Add apples and bring to a boil. Reduce heat and let it simmer for ten minutes stirring
frequently. Serve over the pork loin.
(we usually have Au Gratin potatoes with it)
